The name “gyro” literally means “turn” or “ring” in Greek, referencing the cooking method, which is centered around meat—most commonly pork or chicken in Greece.
The dish is prepared by stacking the meat in a cone shape on a tall, vertical rotisserie spit, which rotates slowly in front of a heat source, cooking and crisping the outer layer of meat.
