Recent research by Lincoln & York reveals that coffee is a major factor in consumers' choice of bakery outlet, with 81% stating the quality of coffee influences their decision.
A significant portion of consumers, 47%, purchase coffee from a bakery or sandwich shop at least once a month. Notably, a fifth of 25 to 34-year-olds buy coffee from these establishments once a week.
The findings are part of the report 'The rise of bakery coffee: trends, insights & opportunities', which compiled responses from over 1,000 consumers and 16,000 interactions over a two-week period in July 2025.
