Roslyn Baker Dana Pollack Expands Her Sweet Empire with New Cookbook

Dana Pollack, the founder of Dana's Bakery, shares her signature gluten-free recipes in a new cookbook, bringing indulgence back to those with dietary restrictions.

Pollack, an award-winning baker and entrepreneur, has made a name for herself by proving that gluten-free desserts can be as indulgent as their traditional counterparts.

Cookbooks are really special to me, they're something you can pass down and save. I find cookbooks, especially baking ones, very special—it's like having a baking bible full of tricks of the trade that are timeless.

A former photo editor, Pollack left her publishing career over a decade ago to pursue her passion for pastry at the Institute of Culinary Education in New York City.

Her new cookbook, "Bake It Gluten Free: 100 Recipes for Classic Treats," is a labor of love, published in October.

Pollack lives in Roslyn with her husband and two daughters.
